Any cookers out there?

Okay so I am getting better at cooking but I tend towards the super easy ones during the week while I have to work and then the more indepth ones on the weekend. I am in love with my slow cooker :)

So thought I would check and see if any of you have recipes that are super easy, or that are slow cooker ones that you love for a work day that you want to pass along. Today I am trying out a beef stew for the first time if I like it then the recipe stays in my book and if I don't then they get chucked :)

If you have one to pass along maybe change the subject to the Recipe name and then people can decide based on title if they would like to try it or not.

Blackshadow I'm "new" to cooking, I'd like to use more "wholesome" foods for cooking rather than boxed or packaged. Want to keep an eye on this thread.

I do stews, chilis and corned beef in the slow cooker. I'll look for some recipes when I get home.

Pulled pork

Take a large pork roast, trim off excdess fat and throw it in with a can of beer and a bottle of bbq sauce of your choice. Set the slow cooker in the morning. Pick up fresh buns on the way home. Shed the pork (will be super easy by end of day) and voila pulled pork sandwhiches. Doesnt get much easier than that.

Hmmm, I do stews in the slow cooker, but its mostly a 'toss stuff in' sorta thing than follow a recipe, I mostly use it for iced tea in the summer though.

Beer on the other hand, haven't tried it on stew, but I have a quickbread recipe for anyone who likes beer AND sourdough bread.....

Oh how I love my slow cooker, I have 3 cook books on it alone.

1. 15 bean soup---this is a fave of my kids by the way, don't let the bean name scare you off

a. buy a pack of 15 beans mix and soak in cool water for 24hrs
b. rinse beans and put in slowcooker with
4 qts water, 1 halved small onion, 2 can of diced tomatoes, the included seasoning packet that came with beans is optional, and your choice of meat. I often used a cut up kielbasa sausage, but nothing beats a ham bone!!!!
c. put on high and leave for about 8hrs,

this is soooooo good.

2. another is baked potatoes

wash and dry baking potatoes, rub with olive oil and salt, wrap in foil. Put in slow cooker on low, and bam! perfect potatoes, load with chili, sour cream, cheese and eat up.

3. Dorito salad- the name is horrible but it's what my kids named it. It's taco salad but we use Dorito's for the chips

a. brown hamburger meat and rinse
b. rinse 1 can each of dark red kidney beans, black beans, and garbonza beans
c. shredded lettuce and cheese
d. chop tomatoes
e. mix 1 jar of salsa with2-3 large dallops of mayo

mix a,b,c,d in a large bowl, put Dorito's onto plate and lightly crush, put mix on top and pour some of e on it.

this actually only takes about 15min , browning time of meat, to make. Except for chips all healthy.
A dallop of sour cream on top is great too.

I hope you enjoy, these are very quick and fairly healthy meals. And all the kids I feed them to love them . I will post more later

Just threw a bunch of chicken legs in the crock pot yesterday with a can of crushed pineapple and a bottle of barbecue sauce. It was good!

I absolutely hate cooking, food, etc. I wish there was a pill we could just take like on the Jetsons ;) However, when I am forced to feed my hungry husband and five yr old daughter, I will whip something up. We're not fans of fast food, so it makes it kind of tough sometimes. The crock pot is nice though because i can throw something in there and it will be done by the time I get home from work. Although I consider it to be a form of torture on the dogs though, having to smell that all day. ;)

Get on Pinterest. There are oodles and oodles of crock pot recipes on there.

I also do stew with a heavy red wine like a cab and a pinch of nutmeg. That makes it pretty yummy and the meat really tender

Slow Cooker recipes. I've played around with some and they turned out awesome.

And, now that I'm home, Beer Bread (this is a REALLY easy recipe to make, no kneeding or rising required, but you do have to like the smell of beer and the taste of sourdough/beer in order for it to work):

3 cups (sifted!) all purpose flour
3 tsp baking powder
1 tsp salt
1/4 cup sugar
1 (12ounce) can or bottle of beer of your choice (yes the alcohol matters, non-alcoholic won’t work)
1/4 cup melted butter
Preheat the oven to 375. Mix dry ingredients, stir in beer. Pour batter into well greased loaf pan, and smooth out the top as best you can. Pour melted butter on top and set in the oven (place a piece of tin foil underneath unless you really want to be cleaning up burnt butter off the bottom of your oven). Bake for 1hr. Should be nicely golden all over when done. Let cool for 10 – 15 minutes before cutting.

Crock pot Iced Tea

Quick disclaimer, I use loose tea cause I was raised by a tea snob, I don't see why you couldn't use the cheap bagged stuff from the store though if you wanted, you'll have to do your own trial and error as to how much though.

You'll need a crock pot that'll hold at least 3/4 gallon of water (give or take).

3 very heaping teaspoons (tableware teaspoons, not measuring spoon teaspoons) of honeybush vanilla
6 very heaping teaspoons of peppermint
9 very heaping teaspoons of spearmint

Fill the slow cooker with approx 3/4 gallon of water, put in tea (I put the loose tea in tea bags I buy from the same place I buy the tea cause I hate straining it afterwards). Set crock pot on high and put on lid. Set timer for two hours. At the end of two hours pull out tea (or set up strainer) and pour into a 1gallon pitcher, fill remaining space in pitcher with cold water and add suger or other sweetener to taste (the mints really need SOME sugar to bring out the flavor). Put in fridge to cool and enjoy!

Re: Any cookers out there (Grape Salad)

Green Grape Salad:

Stupidly easy, always tasty.

4 lbs. green grapes, washed and de-stemmed (about two large bags)
8 oz. cream cheese (1 box), softened
8 oz. sour cream (about 1 cup)
1/2 cup sugar
1 tsp. vanilla extract
brown sugar
chopped nuts (I like walnuts or pecans)

Wash grapes, let dry.
Mix cream cheese, sour cream, sugar, and vanilla in a large bowl until creamy. Add grapes. Stir.
Sprinkle brown sugar and chopped nuts on top. Cover, refrigerate a couple of hours.

I've discovered that plain or vanilla yogurt works really well in place of the sour cream too, so use whatever's handiest :)

@ruthcatrin: I LOVE beer bread! So easy to throw together in case of emergency company!

Once I get home I'll have to toss up my recipe for slow-cooker beef stroganoff. Saute the meat and stuff really quick in the morning, set it for 8 hours and it's done for dinner ...

I'm not a much of a beer drinker, and hubby doesn't like sourdough, so I don't get to make it very often, but talk about an easy recipe! I saw an icecream version once, I keep meaning to track it down and try it....

... When you say easy, do you mean like a few ingredients and minimal prep or can ya stand some prep work and fairly easy steps? I've been doing a gourmet/dinner night every Sat for two years! But I think I could come up with a lot of really stand out dishes that are pretty easy for you. ;)

Aniversary chicken

Brown 4 Boneless, skinless chicken breasts in oil and place into a 9x9 baking pan. Combine 1/3c ranch salad dressing, 1/3c teriyaki sauce and 1 pkg onion soup mix. Pour over chicken breasts. Cover with 1c grated cheddar cheese and sprinkle with 1/4c bacon bits. Cook in a 350 degree oven for 1h (until juices run clear).

I serve it with mashed potatoes and a salad.
