Why is this happening? Allergies?

Our 17 month old Cane Corso suddenly has hives as of yesterday morning is scratching and itching like crazy. This all started when we opened a new bag of his food, Merrick Classic lamb and brown rice.. he's been eating that for the last 5 months just fine. We opened this last bag and he ate a few meals, as usual, but then he started eating it slower and slower, picking at it here and there. Then he started skipping meals, and I had to coax him to eat (which is not normal and has never happened!) A couple of things happened during this time, he ate the contents of our toddlers toilet (eww), it was nap time, the kid went #2,dog snuck in and got it before we knew it was there. He was being picky about the food before this, but after this he stopped eating it all together (tummy ache?) What followed is explosive diarrhea for a couple days- obviously, then one night he was scratching a bunch, so I took him out to brush him. The next morning he is covered in hives from toes to ear tips. He also threw up a couple times, mostly because I think he was looking to eat something, grass/leaves/wood particles, (poop).... besides his food. I ran out and returned the bag of food and was afraid to get him the same stuff because of his refusal to eat it. I decided on Solid Gold lamb and brown rice formula (I know you are supposed to mix, but he was not even touching the Merrick, so I just got something similar)... His stool actually seems to be firming up, the hives seem to be going down, his ears are all puffy like he might have hematoma's forming. :/
I know he is at the age where he could be developing allergies, it also has finally been warm enough for a long enough period of time that the bugs are out now (maybe the itchiness and hives are reaction to bug bites?) he's only had two meals of the solid gold now, and I plan on giving him a bath tonight just in case he rolled in something... But is it possible we got a bad bag of food? Sudden allergies? Obviously eating the kids toilet contents didn't help... Maybe just the perfect storm of everything all at once? We are supposed to be traveling this next week, and I definitely don't want to leave him if he is having these issues right now. Any input or ideas will help, I guess I just need to pick some like minded dog brains on this... Because other then waiting it out and seeing how he does, I'm not sure what to do. Thanks for your input!
