Hi there... welcome to the forum and congrats on the new home and the decision to get a corso!
I have a corso who is just over 4 months. I got him from Black Shadow Cane Corso in NB, Canada, so probably not the ideal breeder for you, as it is out of the country. However, I will still share my experience!
I found the breeder and e-mailed her asking when her next planned litter was. She told me the next expected breeding and asked me to fill out the application on her website if I wanted to be put on the notification list for when the breeding was confirmed. The application was mostly about what I was hoping to get from a puppy (show/pet quality, temperament, etc), and what my lifestyle was (how long the pup would be alone each day, people in the household, etc). I was a bit far from the breeder, so I did not meet my pup until the day I took him home, however the breeder sent lots of pictures and I was allowed to visit after 6 weeks, had I wished. What I really liked was that at 7 weeks (ish) she did temperament testing, then judging on my application matched a puppy to me. And she couldn't have picked a better pup for me! He is laid back and loves to snuggle!
I would say that it CAN be safe to send a deposit without seeing the pup (I did it that way) but ONLY if you know that you are going with a reputable breeder. I met one of Black Shadow's dogs from a previous litter and the owner was very happy with the pup and breeder. After speaking with the breeder, I was able to tell how devoted she was to the breed and I happily sent along my deposit when the time came.
I honestly could not be happier with my pup. He is so smart! And stunning... people stop us everywhere we go to comment on how cute he is. Corso's are an amazing breed and I am sure you'll agree when you find your own!
