Pooping in crate and eating it

We recently rescued a 4 year old mastiff. She is apparently crate trained by the former owners. However recently we believe she is peeing and pooping in her crate and eating the evidence. No poop and pee can be found in the crate but the room and her fur smell terrible.

The vet has cleared her of any medical issues. She is in the crate approximatively 8 hours 4 days a week. Can anyone give any tips?

If there is no evidence of poop then Im sure its just gas. She is a mastiff and they can fart a lot... just saying

About the peeing... 8 hours is a long time for a dog to sit in a crate. She may never have been properly potty trained. I suggest, if you can, giving her a pee break during the day. Maybe you can take a lunch break? Have a neighbor come over?
 
We have the same problem. We don't keep Houdini in a crate though. We have found evidence of poop on the floor, but only the smell and where you could see it "was" but disappeared. He eats his poo. The vet suggested MSG to sprinkle on top of their food. It is suppose to make it taste bad. Like it can't taste bad enough?? LOL We have found if we do not feed him or offer water after a certain time, he makes it thru the night. He always has to poo after he eats. And for gas...Houdini has alot of it! Usually when he does,he has to go out and poo.
