Yeast and smoked meats?

I have read repeatedly that smoked meats promote the growth of yeast. Does anyone know if this applies only to commercially smoked meats? I'm wanting to smoke a brisket and share it with the furkids for treats. I'm not seeing anything in the seasoning that we would use that would promote yeast. Could it be a chemical that is used to preserve the commercially smoked meats or is it something in the smoking process itself?

Hm, you're right I've seen that all over (including on sites for human health). But no one seems to get into the WHYS.....

I found this: Articles - Michigan Food Allergy, Sinus & Asthma Specialists - W. Bloomfield MI, Livonia MI which seems to indicate that the problem is a specific chemical and certain types of fermented foods (which makes sense, fermentation is a yeast process), so I guess the next question is if the chemical in question is an additive added to processed meats or if its a naturally occuring byproduct of something like smoking ......

I have no idea, but I'm also interested in finding out as we do a lot of smoking over here, too.

BTW, totally drooling over here at the thought of a smoked brisket... :)
