No idea about probiotics to use but in my experience if the diarrhea isn't sudden, i.e.they ate something bad, it has always been related to the food being fed. My EM is unable to have any sort of poultry in kibble or treats. Turkey caused immediate gas issues but both chicken and duck took time before it became apparent there was a problem. Over about a month his stool got progressively softer until it was almost water. Changing to non poultry food solved the problem. My other dog had a similar bout of unexplained diarrhea but his turned out that he was getting too much food. Reducing how much he was fed fixed things for him.
Just a couple of possibilities for what could be the problem if there is no known medical issue such as parasites/worms.

I actually just picked her up some Solid Gold Salmon high protein today; she's been on a NO poultry diet since reading further into these boards and reading about other Corso's having issues starting at Hazels age with poultry, pisses me off she's so expensive, but then again i did pay a pretty damn penny for her hahahaha ;D we'll see if this works.

I can't find the calcium numbers for the Solid Gold Salmon recipe... you want calcium under 1.5% (the lower the better) for growing mastiffs.

We started Denna on Solid Gold Wolf Cub, which had good numbers 6 years ago.

For probiotics - any human version is fine. Plain live yogurt and kefir is also fine. Raw goat milk is a great option, and any pet food boutique should have lots of options. We use Dogzymes among other brands... I like to rotate probiotics brands to keep variety in Denna's diet, including gut-bugs.

For the occasional GI upset, I keep OnlyNaturalPet's "GI Support" on hand. Probiotics and herbal support for the digestive tract.
