Ca de bou and breedstandard?

Hi!

I am new here and I am about to buy a Ca de bou. So I have some questions.

How come it says in the standard that the color black is ok and almost all "black" dogs are black, tan and white? Is that an accepted color? Or is it disqualifying?
I also wonder how hard they judge if the dog has white on the behind paws?

They mean the black in the bryndly collor.Black and tan is not in the standaard.But in some countrys they accept.
